What you need:
- Carrots
- Leeks
- Fennel
- Parsley
- Peppercorns
- Fennel Seeds
- Brown Onions (peeled)
- Bay Leaf
- Thyme
When making stock you can use a lot of the off-cuts that you would normally throw away such as carrot peels or the stalks of the parsley.
All you need to do is:
- Cover with water
- Bring to the boil
- Simmer for at least 20 minutes
